
Spinach salad with pine nuts

Ingredients
- Apples – 2 pieces
- Walnuts – 120 g (4 oz), toasted, chopped
- Feta cheese – 120 g (4 oz)
- Pepper – to taste, ground
- Salt – to taste
- Honey – 3 tbsp
- Apple cider vinegar – 1 tbsp
- Extra-virgin olive oil – 3 tbsp
- Baby spinach – 1 package
- Lemon – 1 piece, fresh
Directions
- Wash the apples, core and then dice them into large pieces.
- Thoroughly wash the baby spinach. Remove the bruised leaves and long stems. Pat the leaves dry. Put it in a large bowl and set aside. You can leave it in the fridge to cool while you’re preparing the dressing.
- Toss the diced apples in a large bowl. Slice the lemon in half. Squeeze half of the lemon on the contents of the bowl. The lemon juice will help keep the apples from becoming yellow.
- To make the dressing, get a small bowl and whisk the juice of the other half of the lemon along with the pepper, salt, honey, apple cider vinegar and olive oil.
- Take the spinach leaves from the refrigerator and combine with the apple. Mix well. Then, slowly pour the dressing. Toss well to coat. Add the feta cheese and the almonds. Toss again then serve.
